First off, it's essential to get a big enough screen so you can play at a good resolution. You should look for a screen that is at least 16", unless you have a monitor that you'll plug in to.
After you find the monitor you want, you should look for ~4gb of RAM. 4gb is plenty to run games that have even the highest of requirements. A good brand of RAM to look for is OCZ and Corsair.

Make sure that you get the kind of RAM that goes inside a laptop, not inside of a desktop. There's a difference. Desktop RAM is big, and isn't compatible with laptops.
You'll also want to look for a good graphics card to make sure your games run well. The two main brands of graphics cards are nVidia and ATi. I personally recommend nVidia because it's the one I use, but some swear by ATi.
A good series of nVidia cards for notebooks is the Go Series. The top of the line Go card is the 7 series, but they're pricey, running around 250-300 dollars.

It would be fine to settle for something of lesser quality, but know that it may not run games as well as a higher quality of Go/other cards.
These are the three main things you need, but make sure you get a decent sized hard drive with good speed, it should be >250gb in size, and at least 7200rpm in speed. This allows your computer to load games faster, and also increases the overall speed of your computer.
Also look for how many ports the laptop motherboard has. If you're building your laptop without an initial laptop, you should research laptop motherboards. Asus makes good mobile mobos, so look at those. But chances are that you're either upgrading or just changing the insides with a motherboard intact, so you're set.
